White beans with chorizo and spinach

Ingredients (16)

2 Tbs fresh chillies — 573
4 shallots — sliced
300 g button mushrooms — baby
4 garlic — cloves, sliced
200 g chorizo sausage — sliced
1/2 cup sherry
3 cannellini beans — tins, drained
1/2 cup stock — chicken
nutmeg — freshly grated
1/2 tsp dried chillies — crushed
sea salt and white pepper
200 g spinach
dried very well
30 g fresh Italian parsley — chopped
olive oil — extra virgin, for drizzling
TO SERVE:
bread — crusty

Method:

Heat olive oil in a large pot. Sauté shallots until lightly coloured. Add mushrooms and sauté until golden brown. add garlic and chorizo, and cook for 1 minute. Deglaze with sherry.

Add beans, stock, nutmeg, chilli, salt and pepper. simmer for 10 minutes.

Stir through spinach and parsley. Drizzle with olive oil. serve with crusty bread.
