  • salt and black pepper to taste
  • 250
    g
    mushrooms
  • oil for frying
  • 250
    g
    bacon rashers, grilled
  • 8
    eggs
  • chives, chopped
 

Method

 
Fry mushrooms in a little oil and mix with grilled chopped bacon. Set aside. Beat the eggs slightly and add chopped chives, salt and black pepper to taste. Pour into a hot pan, lifting the edges to allow the uncooked egg to run underneath. Sprinkle the bacon and mushrooms on top and heat over medium heat until the egg is just set. Fold over and serve immediately.
