Omajova soup

    large omajova, stem included (or about 750 g fresh button mushrooms)
  • 1
    large onion, chopped
  • 15
    ml
    olive oil
  • 250
    ml
    dry white wine
  • 500
    ml
    vegetable stock
  • 250
    ml
    cream
  • 5
    ml
    salt
  • freshly ground black pepper to taste
  • fresh coriander leaves chopped
  • rind of a lemon
 

Method

 
Slice the mushrooms and sauté with the onion in the olive oil until tender. Add the white wine and stock and simmer. Add the cream and heat, taking care not to let the mixture boil Remove from. The heat .and season with freshly ground black pepper. Heat just before serving and stir in the fresh coriander leaves and lemon rind. Serve hot.
