Old fashioned vinegar pudding

Ingredients (14)

60 g butter — soft
100 g sugar
1 eggs — large
30 ml jam — apricot
140 g flour — cake
5 ml Bicarbonate of soda
5 ml Baking powder
Sauce:
25 ml vinegar
250 ml milk
45 ml butter
90 ml sugar
125 ml cream
salt — pinch
5 ml vanilla — essence

Method:

Pre-heat the oven to 180°C and butter a small ovenproof dish.
   
Cream the butter and sugar together.
   
Add the egg and apricot jam and beat until light and creamy.
   
Sift the flour, bicarbonate of soda, baking powder and salt together.
   
Mix the milk and vinegar together and add to the butter mixture alternating with the dry ingredients. Mix until mixed through.
   
Turn the dough into the buttered dish and bake in the pre-heated oven for 30 minutes.
  
Place the butter, sugar, cream, salt and vanilla essence into a small saucepan and heat over moderate heat. Bring to the boil.
   
Pour the sauce over the pudding as soon as it is removed from the oven.
