2.00 kg flour — self-raising
30.00 ml Cream of tartar
30.00 ml Bicarbonate of soda
30.00 ml ginger — ground
5.00 ml salt
500.00 g butter — or margerine
1.00 kg golden syrup
1.00 kg brown sugar — soft
6.00 eggs — whisked

Method:

Preheat the oven to 180 ºC (350 ºF) and spray a few baking sheets with non-stick spray or butter lightly. Sift together the dry ingredients and rub the butter into the flour mixure. Heat the golden syrup until runny and stir in the brown sugar. Stir until nearly dissolved and cool slightly. Beat the eggs and add to the dry ingredients. Mix well and shape into walnut-sized balls. Arrange on the baking sheets and flatten slightly with your fingers. Bake for 12-15 minutes until golden brown. Cool slightly on the baking sheets, remove and cool completely on a wire rack. Store the biscuits in a cool place in airtight tins lined with wax paper.
Makes about 300 biscuits.
