    cake flour

    salt
  • 500

    oats
  • 250
    ml
    seedless raisins (optional)
  • 500
    ml
    coconut
  • 375
    ml
    sugar
  • 275
    ml
    butter or margarine
  • 30
    ml
    golden syrup
  • 5
    ml
    bicarbonate of soda, dissolved in a little milk
  • 1
    egg, whisked
  • 5
    ml
    vanilla essence
  • 2
    ml
    almond essence
 

Method

20 min per batch
 
Preheat the oven to 180 ºC and spray a few baking sheets with non-stick spray or butter lightly. Sift the cake flour and salt together. Add the oats, raisins (if using), coconut and sugar and mix well. Melt the butter and golden syrup and cool slightly. Add the remaining ingredients and mix with the dry ingredients. Mix well and knead the dough thoroughly. Shape into small balls and bake for 12-15 minutes until done. Cool on the baking trays for a few minutes before arranging on wire racks to cool completely. Store in airtight containers. Makes 65 crunchies.
