Oat biscuits with cranberries

Ingredients (8)

110 g butter
125 ml castor sugar
25 ml golden syrup
250 ml flour — cake
300 ml oats
100 ml desiccated coconut
80 g dried cranberries
5 ml Bicarbonate of soda — dissolved in water

Method:

Pre-heat the oven to 180ºC.
Butter some baking tins.
Melt
the butter, castor sugar and syrup over low heat, mix thoroughly and
remove from stove.
Let the mixture cool down for a while.
Sift the cake flour.
Add the oats, coconut and cranberries to the cake flour and mix. Add this to the butter mixture and mix.Add the bicarb to the biscuit dough and mix thoroughly.
Drop heaped teaspoons of the mixture onto prepared baking tins.
Bake for approximately 8 minutes or until golden brown.
Let it cool slightly in the baking tin and transfer to a wire rack.
When cooled down completely, store in an airtight container.
