Ingredients (4)

6.00 eggs — extra-large, whites only
250.00 ml castor sugar
250.00 ml flour — cake
150.00 g nuts — mixed, chopped

Method:

Preheat oven to 180 &degC.
Grease a medium-size cake tin with non-stick spray.
Whisk the egg whites until soft peaks form.
Beat in the castor sugar by the spoonful, beating continuously.
Using a spatula, fold in the cake flour and nuts.
Pour into the prepared tin and bake for 45 to 60 minutes.
Leave to cool before slicing thinly using a serrated knife.
Arrange on a baking sheet in a single layer and dry out at 100 &degC.
Store in an airtight container.
