Nutty vegetable stir-fry

    finely chopped fresh ginger

    crushed garlic

    leeks, sliced

    soy sauce

    honey

    red pepper, cut into strips

    yellow pepper, cut into strips

    sticks celery, sliced

    broccoli, cut into small florets

    brown mushrooms, sliced

    peanuts, roasted
 

Method

20 minutes
 
1. Cook the rice in the vegetable stock. Drain and set aside. 2. Heat oil in a large frying pan or wok and fry ginger and garlic for a minute. Add the leeks, soy sauce and honey and stir-fry for a minute. 3. Add remaining vegetables, except the mushrooms, and stir-fry for a further 5 minutes. 4. Add mushrooms and drained rice and stir-fry until mushrooms are tender. Sprinkle with the roasted nuts, season to taste and serve.
