Ingredients (12)

250.00 ml brown sugar
200.00 ml butter
2.00 ml vanilla — essence
2.00 eggs — large
500.00 ml flour
5.00 ml Baking powder
salt — pinch
5.00 ml Bicarbonate of soda
250.00 ml white sugar
625.00 ml oats
250.00 ml peanuts — chopped
250.00 ml coconut

Method:

Preheat oven to 180 ºC. Cream together sugar, butter and vanilla essence. Add eggs and beat well.
Sift together flour, baking powder, salt, bicarbonate of soda and sugar and add to creamed ingredients.
Add oats, nuts and coconut and mix well.
Roll into hazelnut-sized balls (can be rolled in sugar, if desired), place on a lightly greased baking tray and bake in the oven for 10-12 minutes, or until cooked. Makes 8 dozen.
