Nutty mocha muffins

    g
    wholewheat flour
  • 200
    g
    cake flour
  • 60
    ml
    cocoa
  • 15
    ml
    baking powder
  • pinch of salt
  • 10
    ml
    instant coffee granules
  • 60
    g
    soft brown sugar
  • 45
    ml
    honey
  • 150
    ml
    milk
  • 1
    large egg, lightly beaten
  • 15
    ml
    oil
  • 5
    marshmallows, cut into small pieces
  • 100
    g
    mixed nuts, chopped
 

Method

15 to 20 minutes
 
Sift flours, cocoa, baking powder and salt together.
Add the bran left behind from the wholewheat flour to the bowl.
Dissolve coffee granules in 30 ml boiling water.
Add sugar, honey, milk, egg and oil and mix well.
Add marshmallows and nuts to the flour mixture.
Pour in the liquid ingredients and stir until just blended.
Spoon mixture into greased muffin tins and bake for 15 to 20 minutes, until cooked through.
Cool for a few minutes before removing from the tin and brush with extra honey if desired.
Enjoy at teatime or as a lunchbox snack.
