Ingredients (14)

190.00 ml flour — wholewheat
360.00 ml flour — cake
60.00 ml cocoa powder
15.00 ml Baking powder
salt — just a pinch
10.00 ml nestlé coffee powder
30.00 ml water — boiled
100.00 ml brown sugar — soft
45.00 ml honey — runny
150.00 ml milk
1.00 eggs — whisked
15.00 ml oil
5.00 marshmallows — cut into smaller pieces
100.00 g mixed nuts — chopped

Method:

Preheat the oven to 220 ºC and spray a muffin tin with non-stick spray.
Sift together all the flour, cocoa, baking powder and salt and add the bran left behind in the sieve to the bowl.
Dissolve the coffee in the boiling water and add the sugar, honey, milk, egg and oil. Mix well.
Add the marshmallows and nuts to the flour and pour over the liquid. Stir the mixture until just blended – it will be fairly stiff.
Divide the mixture between the 12 hollows of the muffin tin and bake for 15-20 minutes until done.
Cool slightly, remove from the tin and serve hot.
Makes 12 muffins.
