Nutty meringues

Ingredients

  • 4
    large egg whites
  • 2
    ml
    cream of tartar
  • 230
    ml
    (200g) castor sugar
  • 2
    ml
    vanilla essence
  • 50
    g
    finely chopped pistachio or other nuts,
  • or 50g grated chocolate
 

Method

1 hour + drying time
 

Beat the egg whites until soft peaks form. Add the cream of tartar and a pinch of salt and beat until stiff.

Add the sugar, 25ml at a time, beating well between each addition to dissolve the sugar.

Fold in the vanilla with the last 25ml of castor sugar and the nuts or chocolate.

Line baking trays with baking paper. Spoon small rounds of the meringue mixture onto the trays. Bake in a preheated oven for one hour. Switch the oven off and leave for 1-2 hours to dry out.
