Nutty lemon slices

    castor sugar
  • 90

    flour
  • 80
    ml
    cornflour
  • FILLING
  • 397

    Nestlé condensed milk
  • 2
    large egg yolks, lightly beaten
  • 125
    ml
    lemon juice
  • 1
    lemon, grated rind
  • TOPPING
  • 2
    large egg whites
  • 60
    ml
    castor sugar
  • 125
    ml
    desiccated coconut
  • 50
    g
    flaked almonds
 

Method

30 minutes
 
1. BASE: Cream butter and sugar until light. Add flour and cornflour and mix to form a soft dough. Press into a 160 x 260 mm greased baking pan. Bake in preheated 180 ºC oven for five minutes until lightly browned. Cool. 2. FILLING: Beat ingredients together until well mixed. Pour over base and bake for 10 minutes until set. 3. TOPPING: Beat egg whites until soft peaks form. Add castor sugar gradually, and beat well until sugar is dissolved and whites are stiff. Fold in coconut and spread over filling. Sprinkle with almonds and bake for 15 minutes until golden. Cool in the pan before cutting into squares.
