    ground mixed spice

    soft butter

    vanilla essence

  • apricot jam
  • coconut and toasted almond flakes for sprinkling on top
 

Method

Preheat the oven to 190 ºC (375 ºF). Spray a baking sheet with non-stick spray. Sift the self-raising flour, salt, icing sugar, cloves and mixed spice together in a mixing bowl. Rub in the butter with your fingertips until the mixture resembles breadcrumbs. Add the remaining ingredients and mix well. On a lightly floured surface, roll out the dough until 5 mm thick. Cut out shapes of your choice and bake for 7-10 minutes or until done. Cool and spread with jam. Decorate with coconut or toasted almond flakes. Store in airtight containers. Makes 36 cookies depending on the size.
