Nutty banana and honey ice cream

  • 450
    g
    bananas, peeled
  • 150
    ml
    cream
  • 150
    ml
    natural yoghurt
  • 25
    ml
    lemon juice
  • 125
    ml
    creamed honey
  • 50
    g
    chopped nuts
  • 2
    egg whites
 

Method

 
1. Blend the bananas until smooth. Add the cream, yoghurt, lemon juice, honey and nuts, beating well. 2. Spoon into a shallow tray and freeze until almost firm. Scoop back into the mixer and beat again until smooth. 3. In a clean bowl, whisk egg whites until they form stiff peaks. Fold into ice-cream mixture. 4. Return to the freezer for 1 to 2 hours until firm. 5. Scoop into chilled dessert glasses and serve sprinkled with extra chopped nuts, if desired.
