Ingredients (10)

250.00 ml sugar
125.00 g butter — room temperature
2.00 eggs — separated
500.00 ml flour — cake
125.00 ml milk
10.00 ml port
5.00 ml cinnamon — ground
250.00 ml mixed nuts — chopped
10.00 ml Baking powder
0.00 icing sugar — for sprinkling

Method:

Preheat the oven at 180 degrees. Grease a deep 20 cm cake tin and dust lightly with flour. Cream the sugar and butter. Add egg yolks one by one, beating well after each addition. Add the flour, milk, port and cinnamon and mix wel. Finally stir in the nuts and baking powder.
Beat the egg whites until stiff peaks begin to form and carefully fold into the cake butter. Turn the batter into the prepared tin and bake for 30 to 45 minutes or until done. Leave the cake to cool in the tin for 5 minutes before turning out onto a wire rack to cool completely. Dust the cake with icing sugar just before serving.
