Vegetable fritters

  • 1x 400
    can butter-beans, drained
  • 1
    finely chopped onion
  • 1
    clove garlic, crushed
  • 2
    each ground cumin and coriander
  • 15
    freshly chopped coriander
  • 10
    lemon juice
  • 1
    large carrot, peeled and finely grated
  • 50
    frozen corn, defrosted
  • 80
  • 2
    baking powder
  • sunflower oil
  • salad and chutney, to serve


Drain the beans and put into a food processor along with the onion, garlic, spices, coriander and lemon juice, and salt and pepper to taste. Blend together. Stir in the carrot, corn, flour and baking powder.

Roll into balls and refrigerate for 20 minutes. Heat a layer of oil in a frying pan and fry the balls until crisp and golden. Drain on absorbent paper. Serve warm or cold with salad and chutney.
