Ingredients (12)

800.00 g tuna — or yellowtail fillet
30.00 ml butter
30.00 ml fresh chillies — 573
1.00 lemon juice
COATING
10.00 ml fresh coriander — minced
10.00 ml fresh chillies — minced
10.00 ml garlic — minced
7.00 ml paprika
5.00 ml honey
1.00 onion — small, grated
5.00 ml salt and freshly ground black pepper
1.00 lemon — small, zest only

Method:

COATING: Mix all ingredients together.
Wipe fish with a damp cloth. Spread 1 side of fish with half the coating.
Heat butter and oil in a heavy-based pan until almost smoking. Add fish, spicy side down. Spread remaining coating mixture on uncooked side.
Cook for about 5 minutes, turning fish after about 2 minutes.
Add lemon juice and cook for 2 to 3 minutes, depending on thickness of fillets.
Sprinkle with fresh coriander leaves and serve with lemon wedges.
