Ingredients (12)

sunflower oil — for frying
1.00 onion — large, chopped
12.00 bacon — rindless back rashers, finely chopped
30.00 ml wholegrain mustard
410.00 g butter beans — tinned and drained
410.00 g red kidney beans — tinned and drained
45.00 ml wine — white
sugar — pinch
125.00 ml cream
freshly ground black pepper
30.00 ml fresh parsley — chopped
8.00 thick slices white bread — toasted

Method:

Heat oil and fry onion until glossy. Add bacon and fry until crisp.
Stir in mustard and canned beans and toss to coat.
Gently stir in wine and sugar and cook for a few minutes. Add cream and pepper and stir in parsley just before serving.
Serve on toast with a glass of chilled white wine.
