New-style beans on toast

  • a little sunflower oil for frying

    large onion, chopped

    rashers rindless back bacon, finely chopped

    wholegrain mustard

    butter beans, drained
  • 410

    kidney beans, drained

    white wine
  • pinch sugar
  • 125

    cream
  • milled black pepper
  • 30
    ml
    chopped parsley

    thick slices white bread, toasted
 

Method

 
Heat oil and fry onion until glossy. Add bacon and fry until crisp. Stir in mustard and canned beans and toss to coat. Gently stir in wine and sugar and cook for a few minutes. Add cream and pepper and stir in parsley just before serving. Serve on toast with a glass of chilled white wine. TOTAL KILOJOULE COUNT: 10 120 kJ (2 420 Cal). A portion: 2 530 kJ (605 Cal).
