    jumbo eggs, beaten
  • 30
    ml
    milk
  • 8
    slices raisin or milk loaf
  • butter and sunflower oil for frying
  • 200
    g
    ricotta cheese
  • 250
    g
    rindless back or streaky bacon, fried or grilled until crisp
  • honey or maple syrup
 

Method

 
Beat eggs and milk together and place in a shallow dish. Dip bread in egg mixture until saturated. Heat butter and oil in a frying pan and fry bread on both sides until golden. Remove from pan, place on absorbent kitchen paper to drain and keep warm until all slices are ready. To serve, place 2 slices on each plate. Top with slices of ricotta cheese and cooked bacon rashers. Drizzle honey or maple syrup over and serve immediately.
