New Year's chicken

  • 2
    large chickens, cut into portions
  • onion salt, salt and pepper, barbecue spice, soy sauce and Steer's seasoning salt to taste
  • 500
    ml
    mayonnaise
  • 125
    ml
    soy sauce
  • 125
    ml
    chutney
 

Method

 
1. Arrange chicken portions neatly in a large ovenproof dish. 2. Sprinkle seasoning over. 3. Mix mayonnaise, soy sauce and chutney and spread over chicken. Bake open in oven at 160 ºC for one hour, then at 200 ºC for another hour or until most, not all, excess juice has dried up. 4. Chicken need not be served piping hot.
