Ingredients (5)

	nectarines
	prosciutto — Parma ham or Black Forest ham
	rocket — wild
15 ml	olive oil — extra virgin
20 ml	vinegar — balsamic

Method:

Break proscuitto slices into 8 thinner strips and wrap around each nectarine wedge.
Place rocket in a bowl and dress with balsamic vinegar and olive oil.
Arrange some rocket on 4 plates, top each plate with 2 wrapped nectarines wedges, drizzle with a bit more olive oil.
OPTIONAL: Sprinkle with bits of feta or Goats cheese
