    ripe nectarines, halved and sliced

    lemon (juice only)

    icing sugar

    fruit liqueur or vodka (or berry fruit juice)
  • vanilla ice cream
  • biscuits, to serve

Toss nectarine slices in lemon juice. Blend raspberries and sugar together in a food processor or mash with a fork. Press through a sieve and add liqueur. Just before serving, divide nectarine slices between 4 tall glasses. Top with scoops of ice cream and coat with raspberry coulis. Serve each with a biscuit. Serves 4.
