Mustard straws

    ml
    cake flour
  • 10
    ml
    mustard powder
  • 5
    ml
    salt
  • 10
    ml
    baking powder
  • 3
    ml
    paprika
  • 250
    g
    butter
  • 10
    ml
    wholegrain mustard
  • 310
    ml
    Cheddar cheese, grated
  • 30
    ml
    (approximately) iced water
  • 1
    extra-large egg, beaten
 

Method

 
Preheat oven to 230 °C and grease a baking sheet with butter or non-stick spray.
Mix the dry ingredients.
Grate the butter and rub it gently into the mixture.
Add the mustard, cheese and enough iced water for form a stiff dough.
Roll the dough out to 6 mm thickness and brush with the beaten egg.
Cut into strips, giving each strip a couple of twists, and bake for 10 minutes until golden brown and done.
Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Store in an airtight container.
