Mustard sauce

Ingredients

  • 2
    extra-large eggs
  • 250
    ml
    pineapple juice
  • 50
    ml
    white wine vinegar
  • 125
    ml
    brown sugar
  • 15
    ml
    cake flour
  • 20
    ml
    dry mustard powder
  • 2
    ml
    turmeric
  • 1
    ml
    salt
  • 60
    ml
    sultanas (optional)
 

Method

10 - 15 minutes
 

Beat the eggs well.
Add all the ingredients except the sultanas and heat slowly, stirring continually.
Bring to the boil and simmer for 10-15 minutes or until the mixture thickens and is cooked.
Remove from the heat and add sultanas if desired.
Serve with Kassler chops or Terrine.

Makes about 500 ml sauce.
