Mustard onions

  • 1
    quantity basic mustard sauce
  • 3
    kg
    small onions, peeled but keep pointed ends intact
  • salt
 

Method

 
Prepare the basic mustard sauce as described. Boil the onions in a little salted water until just tender but still whole. Drain. Bring the mustard sauce to the boil once more and add the onions to the boiling sauce. Bring to the boil. Spoon into sterilised jars while still hot and seal immediately. Makes about 3-4 litres salad.
