Ingredients (8)

250.00 g haddock — smoked, skinned
2.00 eggs — just the yolks
150.00 ml cream
15.00 ml wholegrain mustard
25.00 ml fresh parsley — chopped
sea salt and freshly ground black pepper
15.00 g butter
500.00 g spinach — shredded, blanched

Method:

Poach the haddock in a little water. SAUCE: Place egg yolks, 100 ml cream and the mustard in a saucepan. Whisk over a gentle heat for 8-10 minutes, until sauce is thick. Stir in the parsley and season with salt and pepper. Melt the butter in a saucepan and sauté the blanched spinach for 2 minutes. Stir in the remaining cream and season to taste. Place the spinach in a greased ovenproof dish. Top with the cooked haddock and cover with the sauce. Place under a hot grill for a few minutes, until golden brown.
