Mustard haddock

    smoked haddock, skinned and boned
  • 2
    egg yolks
  • 150
    ml
    cream
  • 15
    ml
    wholegrain mustard
  • 25
    ml
    freshly chopped parsley
  • salt and freshly ground black pepper
  • 15

    butter
  • 500
    g
    spinach, shredded and blanched
 

Method

Poach the haddock in a little water. SAUCE: Place egg yolks, 100 ml cream and the mustard in a saucepan. Whisk over a gentle heat for 8-10 minutes, until sauce is thick. Stir in the parsley and season with salt and pepper. Melt the butter in a saucepan and sauté the blanched spinach for 2 minutes. Stir in the remaining cream and season to taste. Place the spinach in a greased ovenproof dish. Top with the cooked haddock and cover with the sauce. Place under a hot grill for a few minutes, until golden brown. Serves: 4 Preparation time: 10 minutes Cooking time: 20 minutes
