Mustard fillet with horseradish mash

    prepared Dijon mustard
  • salt and milled black pepper

    beef fillet, trimmed
  • 20

    chopped mixed fresh herbs of your choice

    ml
    olive oil
  • HORSERADISH MASH
  • 6
    large potatoes, boiled
  • 150
    ml
    milk (or more if needed)
  • 25
    ml
    olive oil
  • 30
    ml
    creamed horseradish
  • salt and milled black pepper
 

Method

 
Preheat oven to 200 ºC. Rub mustard and seasonings over fillet, place in an ovenproof dish and layer herbs over meat. Drizzle with olive oil. Roast for 30 minutes then remove from the oven and allow to rest for 5 minutes before carving. Serve with horseradish mash. HORSERADISH MASH: Mash potatoes in a large mixing bowl with milk, oil, horseradish and seasoning until creamy.
