Mustard curried beans

    baby green beans, sliced
  • 700
    g
    onions, sliced into rings
  • 500
    ml
    white grape vinegar
  • 10
    ml
    salt
  • 45
    ml
    golden syrup
  • 5
    ml
    turmeric
  • 30
    ml
    medium curry powder
  • 750
    ml
    sugar
  • 30
    ml
    mustard powder
  • 80
    ml
    cornflour
  • 5
    large tomatoes, skinned and finely chopped
 

Method

 
Cover the green beans and onions with water and bring to the boil. Boil for 20 minutes and drain. Mix the remaining ingredients, except the tomatoes and bring to the boil. Stir until the mixture comes to the boil and thickens. Add the beans, onions and tomatoes and simmer for another 5-7 minutes. Spoon into sterilised jars while still hot. Makes 3,2 litres.
