Mustard beans

    quantity basic mustard sauce
  • 3
    onions, sliced into rings
  • 3
    green beans, topped and tailed
  • 4
    whole cloves garlic (optional)
  • 4
    whole red chillies (optional)
  • 15


Prepare the basic mustard sauce as described in the recipe. Bring all the vegetables to the boil with a little water and cook until tender but still crisp. Drain. Bring the mustard sauce to the boil once more, add the vegetables and boil thoroughly again. Spoon into sterilised jars while still hot and seal immediately. Makes about 4 litres salad.
