Mustard and mango sauce

    ripe mangoes, skinned and sliced

    ml
    yellow or black mustard seeds
  • 1
    ripe banana, chopped
  • 30
    ml
    fresh ginger, finely grated
  • 1
    clove garlic, crushed
  • 125
    ml
    grape juice
  • 10
    ml
    sherry vinegar
  • 7
    ml
    chilli oil
  • salt and freshly ground black pepper
 

Method

 
Reserve a quarter of the diced mango. Place all the ingredients in a food processor and process until smooth. Fold in the reserved diced mango.
