Mustard and herb butter

    butter
  • 60
    ml
    chopped shallots
  • 15
    ml
    custard powder
  • 10
    ml
    chopped garlic
  • 15
    ml
    chopped chives
  • 15
    ml
    chopped fresh parsley
  • 0
    salt and freshly ground black pepper to taste
 

Method

Heat 15 ml of the butter in a heavy-based pan over medium heat. Saute the shallots and garlic until the shallots are translucent. Spoon into a mixing bowl and add the remaining butter, mustard, herbs, salt and pepper. Stir with a fork to mix well. Spoon the butter mixture onto clingfilm and shape into a roll about 4-5 cm in diameter. Roll it up in the clingfilm and refrigerate until cold and hard. Slice and place a round on each cooked steak.
