Ingredients (7)

4.00 fresh mussels
sea salt and freshly ground black pepper
lemon juice — to taste
flour
1.00 eggs — beaten
breadcrumbs — sifted
butter — clarified, for frying

Method:

1. Steam the mussels in white wine and vegetable stock. Shell and season with salt, pepper and lemon juice.
2. Thread mussels on a skewer and dip in flour, egg and breadcrumbs.
3. Cook in clarified butter until golden. Place on a bed of bean sprouts and wild mushrooms (see recipe) and garnish with parsley and sauce remoulade (see recipe).
