Ingredients (9)

30.00 ml butter
6.00 spring onion — chopped
2.00 garlic — cloves, crushed
200.00 g fish — white flesh, cubed
500.00 g mussels — shelled
375.00 ml cream
ciabatta — toasted
mayonnaise — garlic, to serve
fresh chives — to garnish

Method:

Melt butter in a frying pan, add spring onions, garlic and fish and simmer for 2 minutes. Add mussels and cream and simmer until heated through. Serve in soup bowls topped with a slice of toasted Italian bread and a dollop of garlic mayonnaise, garnished with chopped chives.
Serves 4.
