Mussel chowder

    butter
  • 6
    spring onions, chopped
  • 2
    cloves garlic, crushed
  • 200
    g
    white fish, cut into chunks
  • 500
    g
    mussels, shelled
  • 375
    ml
    cream
  • toasted Italian bread to serve
  • garlic mayonnaise to serve
  • chives to garnish
 

Method

 
Melt butter in a frying pan, add spring onions, garlic and fish and simmer for 2 minutes. Add mussels and cream and simmer until heated through. Serve in soup bowls topped with a slice of toasted Italian bread and a dollop of garlic mayonnaise, garnished with chopped chives. Serves 4.
