Mushrooms de luxe on toast

    large brown mushrooms
  • 60
    ml
    mascarpone or cream cheese
  • 10
    pinch
    salt
  • 10
    pinch
    freshly ground black pepper
  • 8
    thin slices ham
  • 4
    slices wholewheat bread
  • 2
    tomatoes, sliced into wedges
 

Method

Preheat the oven to 230°C.

Remove the mushroom stems and place the caps in a roasting tin, hollow sides facing up.

Spoon 15ml of the cheese into each and season with salt and pepper.

Place 2 slices ham on each mushroom so they're completely covered.

Grill for 10 minutes. Meanwhile toast the bread. Place a mushroom on top of each slice of toast.

Serve immediately with tomato wedges.
