Ingredients (7)

4.00 brown mushrooms — large
60.00 ml mascarpone cheese — or cream cheese
10.00 pinch salt
10.00 pinch black pepper — freshly ground
8.00 ham — thinly sliced
4.00 bread — wholewheat, sliced
2.00 tomatoes — sliced into wedges

Method:

Preheat the oven to 230°C.

Remove the mushroom stems and place the caps in a roasting tin, hollow sides facing up.

Spoon 15ml of the cheese into each and season with salt and pepper.

Place 2 slices ham on each mushroom so they’re completely covered.

Grill for 10 minutes.
Meanwhile toast the bread. Place a mushroom on top of each slice of toast.

Serve immediately with tomato wedges.
