Mushroom spread

    ml
    butter
  • 1
    clove garlic, crushed
  • 1
    medium onion, finely chopped
  • 250
    g
    fresh brown mushrooms, wiped clean and chopped
  • 1
    large sprig fresh rosemary
  • 30
    ml
    soy sauce
  • 30
    ml
    sweet sherry
  • chopped fresh parsley
  • salt and freshly ground black pepper
  • 250
    g
    smooth cottage cheese
 

Method

 
Heat the butter and fry the garlic and onion until soft and fragrant. Add the mushrooms and fry until tender. Add the remaining ingredients except the cottage cheese and simmer until most of the liquid has evaporated. Cool, remove the rosemary sprig and stir in the cottage cheese. Season to taste and spoon into small bowls. Chill until needed. Garnish with fresh sprigs of parsley and serve with toast.
