Mushroom savoury tart

    bunch garlic chives, chopped

    eggs, whisked

    pie dish lined with cheese pastry (see versatile cheese pastry recipe)
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Prepare a white sauce. Melt the butter in a saucepan, add the cake flour and simmer for one minute. Remove from the heat and add small quantities of milk while stirring continuously. Heat until the mixture comes to the boil and thickens. Add the seasonings. Remove from the heat and cool slightly. Fry the bacon until crisp and chop finely. Fry the mushrooms and chives in the pan fat and add the second quantity of butter if necessary. Cool. Blend the eggs and white sauce with the remaining filling ingredients and pour into the crust. Bake for 35 to 40 minutes or until done. Serve with a green salad. Makes a medium-sized tart.
