Mushroom sauce

    clove garlic, crushed

    dried thyme

    fresh button mushrooms, sliced
  • 25

    each, butter and cake flour
  • 250
    ml
    milk
  • 65
    ml
    white wine
  • 35
    ml
    sweet sherry
  • 65
    ml
    cream (optional)
  • salt and pepper
  • 1
    onion, chopped
 

Method

 
Fry the onion and garlic in a little oil until soft and fragrant. Add the thyme and mushrooms and fry until tender and done. Season liberally and set aside. Melt the butter in a fairly small saucepan. Remove from the stove plate and sprinkle with the cake flour. Stir until smooth, heating for about one minute while stirring. Gradually stir in the milk, stirring until smooth. Add the mushrooms, white wine and sherry and simmer slowly while stirring continuously until done. Stir in the cream (if using). Heat until the sauce has thickened slightly and remove from the stove. Season with salt and pepper and serve hot.
