Mushroom salad

  • 125
    ml
    wine vinegar
  • 150
    ml
    olive oil
  • 45
    ml
    sugar
  • 2
    ml
    salt
  • 1
    clove garlic, crushed
  • few freshly chopped herbs such as thyme, basil and marjoram
  • 750
    g
    fresh button mushrooms, wiped clean with a damp cloth
  • 5
    ml
    lemon juice
  • 30
    ml
    olive oil
 

Method

 
Place all the ingredients except the mushrooms in a saucepan and bring to the boil. Switch off the plate immediately and add the mushrooms. Leave on the hot plate far 5 minutes. Spoon a little of the sauce in the salad bowl and place the mushrooms on top. Blend the lemon juice and olive oil and pour on top.
