Mushroom salad

    lettuce, broken into bite-sized pieces
  • 250

    white fresh button mushrooms, wiped with a damp cloth and sliced
  • 100
    g
    bacon, fried and chopped
  • 1
    bunch parsley, finely chopped
  • a few radishes for garnishing
  • DRESSING
  • 200
    ml
    sunflower oil
  • 200
    ml
    vinegar
  • 50
    ml
    lemon juice
  • 4
    large cloves garlic, finely chopped
  • 10
    ml
    basil
  • salt
  • pepper
  • 10
    ml
    sugar
  • 15
    ml
    finely grated onion
 

Method

 
Arrange the lettuce leaves on a salad platter and arrange the mushrooms on top. Sprinkle with the bacon and parsley and garnish with radishes. Shake all the salad dressing ingredients in a jar until well blended. Pour over the salad just before serving and keep the rest in the fridge until needed. Serves 4.
