    g
    fresh button mushrooms
  • 1
    lemon, juice
  • 3
    large gherkins, sliced
  • 175
    g
    tomatoes, seeded and cubed
  • 1
    small onion, finely chopped
  • 1
    clove garlic, crushed
  • 30
    ml
    finely chopped fresh parsley
  • freshly ground black pepper
  • pinch of sugar
  • olive oil, to taste
  • 50
    g
    feta cheese, cubed
  • brown bread croûtons
 

Method

 
1. Trim mushroom stalks level with the caps. Rinse and drain, slice, place in a bowl and sprinkle with lemon juice. 2. Add gherkins, tomatoes, onion, garlic, parsley, black pepper, sugar and olive oil and toss. Top with feta anc croûtons.
