Mushroom risotto

    arborio (risotto rice)

    small onion, finely chopped

    fresh button mushrooms, sliced

    fresh oyster mushrooms, broken

    chicken or vegetable stock
  • 2
    spinach leaves, sliced
  • 1
    small tomato, diced
  • 5
    fresh basil leaves
  • 100

    butter
  • 50

    Parmesan cheese, grated
  • salt and pepper for seasoning
 

Method

 
Melt half the butter and sauté onions until soft. Add unwashed rice. Add mushrooms, stirring constantly, then add stock slowly, allowing the rice to absorb it. Add all remaining ingredients except butter and cheese. When the rice achieves a creamy consistency, add cheese and butter and serve immediately.
