Mushroom rice

    long-grain rice (uncooked)

    ml
    water
  • 3
    ml
    salt
  • 250
    g
    button mushrooms, sliced
  • 4
    spring onions, chopped
  • 15
    ml
    butter or margarine
  • 65
    ml
    dry white wine
  • 15
    ml
    chopped fresh coriander
 

Method

 
1. In a saucepan bring rice and water to the oil. Cook covered, over moderate heat for 20 minutes. Remove from heat and allow to stand covered for 5 minutes. 2. While rice is cooking, heat butter in pan and sauté mushrooms and spring onions until mushrooms are golden and their liquid has evaporated. Add wine and simmer, stirring until reduced. 3. Fluff rice with a fork and add to mushroom mixture. Mix in chopped coriander. Heat through and serve.
