Mushroom ragout with paprika

    medium cream sherry (optional)

    bunch spring onions, chopped
  • 250

    button mushrooms, sliced
  • 250

    large brown mushrooms, chopped
  • 125
    ml
    vegetable or chicken stock
  • 125
    ml
    cream
  • 15
    ml
    paprika
  • salt and pepper to taste
  • 30
    ml
    chopped parsley
 

Method

 
1. Melt butter or margarine and sauté spring onions until soft. 2. Add sherry and cook over moderate heat for 1 minute, stirring. 3. Add mushrooms string occasionally for 2 minutes. 4. Stir in stock, cream, paprika, salt and pepper. Simmer, stirring occasionally until liquid is reduced, for about 5 minutes. 5. Stir in parsley. Serve over baked potatoes.
