Ingredients (10)

30.00 ml butter — or margerine
30.00 ml sherry — medium cream
1.00 spring onions — chopped
250.00 g button mushrooms — sliced
250.00 g brown mushrooms — chopped
125.00 ml stock — vegetable or chicken
125.00 ml cream
15.00 ml paprika
salt and freshly ground black pepper — to taste
30.00 ml fresh parsley — chopped

Method:

1. Melt butter or margarine and sauté spring onions until soft.
2. Add sherry and cook over moderate heat for 1 minute, stirring.
3. Add mushrooms string occasionally for 2 minutes.
4. Stir in stock, cream, paprika, salt and pepper. Simmer, stirring occasionally until liquid is reduced, for about 5 minutes.
5. Stir in parsley. Serve over baked potatoes.
