Ingredients (7)

120.00 g butter
250.00 g button mushrooms — sliced
1.00 onion — small, chopped
1.00 garlic — cloves, crushed
2.00 ml fresh thyme
1.00 stock cube — vegetable
10.00 ml sherry — dry

Method:

Melt 80 g of the butter in a saucepan. Add mushrooms, onion, garlic and thyme and sauté until soft. Set aside a few of the mushroom slices to use for garnishing.
Add stock cube and sherry and remove from the heat. Stir until stock cube has dissolved. Cool, then blend in a food processor until smooth.
Pour into a pâté dish and cover with reserved mushroom slices.
Melt remaining butter and pour over the mushrooms.
Leave in the fridge until ready to serve.
Makes 200 ml.
