Mushroom pâté

    g
    butter
  • 250
    g
    button mushrooms, sliced
  • 1
    small onion, chopped
  • 1
    clove garlic, crushed
  • 2
    ml
    fresh thyme
  • 1
    vegetable stock cube
  • 10
    ml
    dry sherry (optional)
 

Method

 
Melt 80 g of the butter in a saucepan. Add mushrooms, onion, garlic and thyme and sauté until soft. Set aside a few of the mushroom slices to use for garnishing. Add stock cube and sherry and remove from the heat. Stir until stock cube has dissolved. Cool, then blend in a food processor until smooth. Pour into a pâté dish and cover with reserved mushroom slices. Melt remaining butter and pour over the mushrooms. Leave in the fridge until ready to serve. Makes 200 ml.
