Mushroom Party Caps recipe

    punnet button mushrooms
  • 1
    bunch
    spinach, blanched and chopped
  • 100
    g
    basil pesto
  • 60
    ml
    pine nuts, toasted
  • 125
    ml
    PnP feta cheese, crumbled
  • 1
    dash
    salt and milled pepper
  • 1
    drizzle PnP Finest extra-virgin olive oil
 

Method

Preheat oven to 200ºC.

Twist mushroom stalks off to create a small hollow in cap.

Place on a baking tray.

Mix spinach with pesto and pine nuts. Spoon a small amount of filling into hollow of each cap. Drizzle with a little oil and season.

Scatter with feta. Bake for 10 - 15 minutes or until cooked through.

Scatter over any remaining pine nuts and serve.
