Mushroom party caps

This moreish mushroom canapés recipe is a great little party starter and proves that life isn’t too short to stuff a mushroom!

Ingredients (7)

1 button mushrooms — punnet
1 bunch spinach — blanched, chopped
100 g pesto — basil
60 ml pine nuts — toasted
125 ml feta cheese — crumbled
1 dash salt and freshly ground black pepper
1 pnp finest extra-virgin olive oil — drizzle

Method:

Preheat oven to 200ºC.

Twist mushroom stalks off to create a small hollow in cap.

Place on a baking tray.

Mix spinach with pesto and pine nuts. Spoon a small amount of filling into hollow of each cap. Drizzle with a little oil and season.

Scatter with feta. Bake for 10 – 15 minutes or until cooked through.

Scatter over any remaining pine nuts and serve.
