  • butter and sunflower oil for frying
  • 2
    medium leeks, well washed and thinly sliced
  • 4
    stalks celery with leaves, finely chopped
  • 3
    cloves garlic, crushed (optional)
  • 3

    sugar
  • 1
    vegetable or chicken stock cube
  • 45
    ml
    water
  • 30
    ml
    white wine
  • salt and milled black pepper
  • 8
    large fresh black mushrooms
  • 100
    g
    feta cheese, crumbled
  • 1
    bunch spring onions, finely chopped
  • 45
    ml
    cream
  • 10
    ml
    wholegrain mustard
  • freshly grated Parmesan cheese (optional)
 

Method

 
Heat butter and oil in a large pan and sauté leeks and celery lightly. Add next 5 ingredients and sauté for 2 minutes. Place mushrooms on top and steam, covered, for about 5 minutes. Mix remaining ingredients, except Parmesan cheese, and place spoonfuls on top of mushrooms. Sprinkle with Parmesan and grill until cheese has melted and is golden brown. TOTAL KILOJOULE COUNT: 4 600 kJ (1 100 Cal). A portion: 1 150 kJ (275 Cal).
