Ingredients (15)

sunflower oil — or butter, for frying
2.00 leeks — thinly sliced
4.00 celery — finely chopped
3.00 garlic — cloves, crushed
3.00 ml sugar
1.00 stock — vegetable or chicken
45.00 ml water
30.00 ml wine — white
salt and freshly ground black pepper
8.00 black mushrooms — large
100.00 g feta cheese — crumbled
1.00 spring onions — bunch, finely chopped
45.00 ml cream
10.00 ml wholegrain mustard
parmesan cheese — grated, optional

Method:

Heat butter and oil in a large pan and sauté leeks and celery lightly. Add next 5 ingredients and sauté for 2 minutes.
Place mushrooms on top and steam, covered, for about 5 minutes.
Mix remaining ingredients, except Parmesan cheese, and place spoonfuls on top of mushrooms.
Sprinkle with Parmesan and grill until cheese has melted and is golden brown.
TOTAL KILOJOULE COUNT: 4 600 kJ (1 100 Cal). A portion: 1 150 kJ (275 Cal).
