    whole tomatoes, finely chopped

    oil

    dry white wine

    brown sugar

    fresh or 3 ml dried origanum
  • 5
    ml
    fresh or 3 ml (generous 0.5 t) dried thyme
  • 4
    cloves garlic, crushed
  • 1
    onion, grated
  • 5
    ml
    salt
  • 1
    ml
    black pepper
  • 500
    g
    fresh button mushrooms, cleaned with a damp cloth
  • garlic butter for brushing
 

Method

 
Blend all the marinade ingredients and marinate the mushrooms for 2-3 hours. Thread on to kebab skewers and grill for about 15-20 minutes over medium-hot coals. Brush occasionally with melted garlic butter. Meanwhile, bring the marinade to the boil and serve with the mushrooms. Makes 6 kebabs.
