Ingredients (9)

1.00 bread — French loaf
2.00 hake — fillet, cooked, flaked
100.00 g fresh mushrooms — cut into pieces and sautéed
1.00 onion — sliced into rings, fried
1.00 garlic — cloves, sautéed
15.00 ml fresh parsley — chopped
60.00 ml sour cream
1.00 eggs — whisked
salt and freshly ground black pepper

Method:

Preheat the oven to 180 ºC (350 ºF). Remove the top crust of the French loaf and hollow out the bottom part of the loaf, leaving a rim about 5 mm wide. Place the hollowed loaf on a piece of aluminium foil. Mix the mushrooms with the fish, onion and chopped parsley. Season to taste with salt and pepper if desired Spoon the fish mixture into the hollowed loaf. Whisk the egg and sour cream together and pour over the fish mixture. Cover with the crust, wrap in aluminium foil and bake for about 40 minutes or until the egg mixture has set. Serve with a salad.
Serves 4-6.
